Butter as a cooking ingredient is extremely versatile and it is something one can’t do without on a daily basis- be it baking or just as a pantry staple. What we lack in India are flavoured or compound butters which are quite popular in other parts of the world.
Unfortunately, the only butter we know of is the salted Amul butter. Also, after the Maggi episode, people woke up to the detrimental effects of packaged foods on one’s general health. That’s where the idea of handcrafted flavoured butters was born with no added preservatives. Here’s my review on flavoured butter:-
Roasted Bell Pepper:
Smooth butter blended along with roasted bell pepper, with small chunks of bell pepper in it. It had a charred flavour which was incorporated due to roasting. Whenever I use to cook red bell pepper my chef always told me that, any vegetable would taste better when sautéed or roasted as compared to any other method of cooking. The reason being interesting, when we saute or roast any vegetable natural caramelization of sugar takes place, which gives a peculiar flavour to it. Hence the sweetness of bell pepper, smoothness of butter and a kick of charred flavour made it very interesting.
Thecha is a classical Maharashtrian condiment made of fresh green chillies, garlic, spices and herbs. It is classically served along with Bhakri & pithla. Sunita has innovated same kind of thecha but with a blend of butter. Where she has used fresh green chillies, always remember fresher the ingredient more flavour it would have. Kudos to Sunita for creating such an amazing flavoured butter.
Kadi Pata Butter
Are you serious? Yes you read it right, another innovation by Sunita which no one has ever made – butter with dominating flavour of kadi pata. It had a peculiar flavour of tempered kadi pata. You can just add 1 spoon of this butter while cooking any dish. This will add flavour of kadi pata as well as it will add richness to dish.
Kanda Lasun Butter
A combination which we use in almost all the curries we make at home. This butter had sweetness of onion & pungent flavour garlic. A spoon of this butter to the curry would really make a difference.
Garlic Basil Butter
Another combination that is quite famous within people. This butter is balanced in terms of flavours. Sweetness of basil was perfectly matched with the flavour of garlic. It can be used as a spread for garlic bread or can be added to the base sauce of pizza.
Red Chilli Butter
This is my favourite flavour amongst the entire collection. The spiciness of bird eye chilli just makes this entire blend exclusive. If you want to increase the spice level of any dish, you can just just add in half a spoon and it will spice it up.
Sunita has another surprise to offer, she makes Fruit flavoured butter according to seasons. I am lucky enough to have one. This butter made from fresh strawberries is treat to have. It works out well for small children. You can use this butter for anything and everything, as a spread on toast or as a flavouring agent for any bread or can make a sweet sauce for desserts using this butter.
